These cinnamon chips are actually pieces of cinnamon sticks and are designed to infuse flavor, such as in mulling spices for hot beverages like wine, rum and cider drinks, for teas and pickling blends. They also lend a warm, mellowing flavor to homemade kombucha. Try adding them in your brewer basket to flavor your coffee, or use for infusing pho broth. (Strain chips out before serving the infused food or beverage.) These chips are also a great aromatic addition to potpourri and herbal sachets. Frontier bulk cinnamon stick chips are kosher certified and non-irradiated. The most commonly found cinnamon in American kitchens is Indonesian cassia. It is sourced from higher elevations and is harvested a bit earlier than Chinese and Vietnamese cinnamons. Korintje translates as “thick quill” and is judged for quality based on the part of the tree that is harvested (trunk vs. branch) and on the length of the bark peeled from the tree.
